Recipe: Easiest Gluten-Free Cookie Ever

 

This cookie is fabulous by itself with tea or coffee and double fabulous with Date Lady Chocolate Spread sandwiched in between them! 
 

Ingredients
2 cups almond flour

1/4 cup Date Lady Date Sugar

1/2 cup Date Lady Pure Date Syrup

Dash of sea salt

Optional Mix-ins: 1/4 cup shredded coconut or dark chocolate mini chips

 

Instructions

1. Mix ingredients until well combined. Use scoop or roll dough into 1-inch balls and then flatten gently until flat and evenly spread.

2. Bake at 325 for 13-15 minutes. Let cool completely.

 

Optional Finish: Spread Date Lady Chocolate Spread on flat side of one cookie. Top with another cookie to create a double stack, or cookie sandwich. Garnish with toasted nuts or Date Lady Date Sugar and cinnamon if desired. Enjoy!


These cookies bake best on parchment paper, silpat or baking stone as they can burn easily. A well-greased cookie sheet will also work, but decrease cooking take by a couple minutes.
