These banana muffins are an excellent back to school option as they are packed with protein, potassium, healthy fats and taste delicious! Any leftovers can be thrown in the freezer and pulled out the night before for early mornings when you're in a rush. This recipe was inspired by the book Primal Cravings and is sure to please anyone in your family, paleo or not!
Date Lady Banana Chocolate Chip Muffins
Makes 18 medium sized muffins, or 12 super-sized muffins
1½ cup Date Lady Date Sugar
1 cup coconut flour
¾ cup tapioca flour
1 tsp baking soda
¾ cup dark chocolate chips
1 cup coconut oil or butter - melted
4 ripe mashed bananas
8 eggs - room temperature
2 tsp vanilla extract
1. Mix dry ingredients (Date Sugar, coconut flour, tapioca flour, baking soda, dark chocolate chips) together, set aside.
2. Mash coconut oil (or butter) and bananas in a large mixing bowl, then add eggs and vanilla until well combined.
3. Gently combine the dry ingredients with wet ingredients.
4. Pour into greased muffin tin or muffin liners and bake at 350°F for 25 minutes.
